An old city institution, the café in Paris has undergone a renewal over the last two decades that has accelerated in recent years: its functions, décor, furniture, style of service and what is consumed there are all being redefined, as is its place in the city's territories and rhythms. In the ‘new’ Parisian cafés, even if the mythical image of the ‘real bistro’ is still invoked, we can see the influence, reinterpreted, of models from elsewhere, in particular that of the ‘home-made’ café.
